MADRAS MUTTON CURRY

 

 

Ingredients:
A

3 tbsp ginger juice

2 tbsp meat curry powder

1 tbsp salt

1 tbsp pepper

 

B

50g meat curry powder

20g chili powder

4 tbsp water

(mix together)

 

C

3 cardamons

1 pc cinnamon stick

5 cloves

 

D

4 tbsp tomato puree

1 1/2 cup water

 

E

200ml DAIRY CHAMP EVAPORATED FILLED MILK

3 tbsp lime juice

(mix lime juice and evaporated milk and allow to curd)

1 tbsp sugar

salt to taste

 

Methods:

  1. Marinade mutton with (A) for at least 2 hours.
  2. Heat ghee in wok, stir fry ground ingredients and onions till golden.
  3. Add in (B) together with (C) till oil is separated from ingredients. Stir in the mutton until well coated.
  4. Mix in (D) and allow to cook till meat is tender.
  5. Add in (E) and continue to stir until quite dry. Garnish with fried onions.
