SQUID DAISIES

Ingredients:

A

10 red chilies

200g shallots

4 pips garlic

2 stalks lemon grass

5 pcs candlenuts

a small piece of turmeric

3 slices galangal

 

B

100ml DAIRY CHAMP EVAPORATED CREAMER

50ml water

3 tbsp lime juice

 

C

salt & pepper to taste

3 tbsp oil

 

Methods:

  1. Stuff the Squid Daisies with fish paste.
  2. Steam for 10 minutes on a platter.
  3. Heat oil, fragrant (A) and add in (B) and (C).
  4. Allow to simmer till thick.
  5. Place sauce onto serving plate, arrange ready Squid Daisies on top and garnish with mint leaves.
  6. Serve hot.
